Jon,
If you're interested in a linux-based PDA, and
want to "roll your own", try taking a look at
the "LART" pages,
http://www.lart.tudelft.nl/
and its "siblings" (BRUTUS, itsy, etc.)
The LART page covers hardware and software
in rather equal proportion, including some
of the questions you asked.
You might be interested to know that the plans
for a prototype of the iPaq handheld PDA were
were made available for private use by (the
former) Compaq's Western Research Lab. (WRL)
One of these days, I'm going to build one,
in the unlikely event that spare time becomes
available.
Let me know offline if you're interested. I
have several book marks to other embedded open
hardware projects....
