Linux is a UNIX for all intents and purposes that just happens to run
on x86.  For Linux you can do it exactly like you do on UNIX, with
dumb terminals if you so desire.  To get a large amount of dumb
terminals hooked up, you'll probably need to get a multi-port serial
board of some sort.  I haven't played with them much, so I can't help
with much more then "this is what you need."

You could also just use Linux as a fileserver like you would with
windows or novell.  It sounds like nothing runs on the server when
you're in this configuration.  You'd just need to install into the
shared drive via one of the workstations.  You'd probably use Samba on
the linux box to do your windows file share.  (Hell, you could run
Samba on any of your UNIX platforms like this as well.)

Seriously, you could do either way.  In fact, I'd support both of you
could.
