[LUNI] OT: wiring phone jacks with CAT5

I wrote a few weeks back about switiching from a shared ADSL line to 
Speakeasy One Link, or some similar dedicated-pair service because the 
phone line I have is so noisy that my DSL cuts out, and I can't use my 
phone. Several folks on the list suggested I redo my inside wiring, and 
the noise has gotten so bad in the last two days that I'm actually 
motivated to do it. I have a couple questions about the wiring to use; 
I'm a little fuzzy on TP vs UTP, and whether it would make a difference 
when running cat5 for use with a 2-wire phone line. Also, I know wiring 
ethernet has to be done using particular pins to prevent crosstalk; 
should I use specific pins for wiring my phone jack? If so, which are best?
