Are you planning to imbed the cable into plaster walls?
That sounds like a pretty inflexible system.

Running two cables like this side-by-side shouldn't cause too much noise to be
induced (especially for STP).  Even UTP is designed with the pairs twisted to
cancel common noise.  If you look at a CAT5 cable, you will also notice
variations in the pairs are different for each pair.
